HARICOT BEAN SALAD

 


.Ingredients:
  • 200 g haricot beans , soaked for 12 hours
  • 1 cinnamon stick
  • 1 onion, finely chopped
  • 1 clove, finely crushed in a mortar
  • 2 ripe tomatoes, skinned and cut into small cubes
  • 50 g black olives
  • 4 tbsp olive oil
  • 4 tbsp mint leaves
  • Salt and pepper
.Way of Cooking:

- Cook the beans with the cinnamon stick over a low heat for approximately
2 hours.

- Drain and transfer to a salad dish. Mix with the onion, clove, tomatoes and chopped olives.

- Dress with oil. Season with salt and pepper and sprinkle with the
mint leaves before serving.
